At Olivias Grönsaker, we grow different varieties of beetroots, some are red on the inside, some are striped. Leaves and roots can be eaten.
Store:
The root stores best when you leave on the leaves and keep it in the fridge, 14 days are no problem. If you cut off the leaves it stores about 4 days. At room temperature the root stores about 3 days.
Leaves
The green, leafy portion of the beetroot is also edible. The young leaves can be added raw to salads, while the mature leaves are most commonly served boiled or steamed, in which case they have a taste and texture similar to spinach.
Root
Beetroots are at their best when eaten small, when they are soft and tender and are good when raw. Bigger ones are better when cooked or roasted.
